Awesome chili everyone! My diet has ended up being a paleo/zone combo. I have not kept up with my food journal but the new outlook on food is working as I'm down about 8 lbs as of this morning. Energy level has been great.

i have sucked at this challenge...between being sick and everything, haven't really done a good job and haven't kept up with a log. :/ just a couple more weeks and i will be back full time! can't wait. :D

Modified a recipe from Betty Crocker on the Bisquick box - Impossibly Easy Cheeseburger Pie. Here is my recipe: Mix together 1/2 cup Almond Flour, 1 cup milk, 2 eggs, 1/2 tsp. salt, 1 tsp. baking powder, 1 tsp. baking soda and 1 cup grated cheese (I used colby jack). Brown 1 lb. lean ground beef or turkey with about 2 tbsp. minced onion flakes and some salt. Place browned meat in a pie plate that has been sprayed with non-stick spray. Pour first mixture over the top of the meat. Bake at 400-degrees for about 25 minutes. I haven't figured out the nutritional value yet but it looks like it's pretty protein heavy and carb light. Enjoy!
