Thursday, February 11, 2010OK, you asked for it and it is coming! We should have a recipe book link up and running soon. This is going to be done allowing members to post recipes by categories. The link will be in the left hand column of the food blog and should be up and running soon!
Remember to make good food choices! Continue to focus on food quality. We took some preliminary measurements on some athletes yesterday and I was blown away by the body composition changes and performance. Remember, "Food is Fuel, give your body the good Stuff"

This recipe yields 2 dozen bars.
Ingredients:
1/2 cup packed brown sugar
1/2 cup Splenda
1 8-oz container vanilla or plain low-fat yogurt
2 eggs, lightly beaten
2 T. almond oil
2 T. fat-free milk (or if you are ok with a little more fat, use buttermilk)
2 t. vanilla
1 cup almond flour
1 cup coconut flour
1 t. baking soda
1 t. ground cinnamon
1/2 t. salt (optional)
3 c. oats (old fashioned or quick, uncooked)
1 c. diced dried mixed fruit, raisins, or dried cranberries (I used apples)
Directions:
In a large bowl, combine the sugars, yogurt, egg whites, oil, milk and vanilla. Mix well. In a medium bowl, combine flour, baking soda, cinnamon, and salt; mix well. Add to yogurt mixture; mix well. Stir in oats and fruit. Spread dough onto bottom of ungreased 9x13 pan and bake in a preheated 350 oven for 28-32 minutes or until lightly brown. Cool completely on wire rack. Cut into bars and store in a covered container.
I greased my pan. I also spread a little butter across the top of the bars before baking then sprinkled with cinnamon.
These turned out a little dry, so I might add one more T of milk and/or oil next time, but they taste great!
